Seodae-hoe-muchim is sliced raw seodae fish
mixed with various seasonings, vegetables, and vinegar. This delicacy of Yeosu uses
natural vinegar made from makgeolli (rice wine) that has been
fermented for at least a year, so it has a very deep and rich taste. A
specialty of the southwest seas surrounding Yeosu, seodae is a flat-shaped fish that has a clean
and soft flavor. It is prepared in a variety of ways and can be enjoyed raw,
steamed, boiled in soy sauce, fried, or stewed. But above all, the
sweet-and-sour flavored Seodae-hoe-muchim is a
special dish that used to be served as part of Surasang (a
table setting for a king), and will stimulate your appetite.
